Andouille sausage has been around for over a hundred years. It is a flavor that is close to my heart because of its origins. The Haitian revolution 🇭🇹🏿was an integral part of the Louisiana Purchase. The influence of Haitian, African and Indian flavors in Cajun and/or Creole food are apparent in this sausage. We stay close to giving you the original flavors. What is most important to me is the patient process. You have coarse ground chunks of meat as well quality time spent to give you that snap on the casing that separates it from anything that you're going to purchase in a supermarket. The smoky cherry wood flavors are apparent as soon as you open the package, and it will definitely add amazing depth to your next stew, po boy, pasta dish or gumbo.
